Banana & Mango Soft-Serve Ice Cream

Banana & Mango Soft-Serve Ice Cream

Naturally Sweet • Dairy-Free • No Added Sugar

Got a ripe banana lying around? Turn it into a smooth, tropical soft-serve ice cream, with no added sugar, dairy, or complicated steps. This refreshing treat is made from real, whole ingredients and gets its creamy texture from frozen fruit and just a splash of coconut milk.

Prep & Freeze Time: 2 hours 10 minutes

Serves: 2

INGREDIENTS:

  • 1 overripe banana, sliced
  • 1/2 mango, chopped
  • 1 tbsp coconut milk
  • 2 squares (10g) dark chocolate 90%, chopped

METHOD:

  1. Freeze the fruit: Place the banana slices and chopped mango into a freezer-safe bag in a single layer (or as flat as possible). Freeze for at least 2 hours or overnight.
  2. Prep for blending: Before blending, break apart any large clusters in the bag. If the fruit is too stuck together, let it sit at room temperature for 5 minutes to soften slightly.
  3. Blend into soft-serve: Add the frozen banana, mango, and coconut milk to a high-speed blender or food processor. Blend until smooth and creamy, scraping down the sides as needed. The texture should resemble soft-serve ice cream.
  4. Serve immediately: Divide into two bowls and top with chopped dark chocolate. Enjoy right away for the best texture.
