This recipe is all about healthy fats, natural sweetness, and a bit of chocolate love. The base combines creamy almond butter, cashews, dates and hazelnuts, blended together with melted coconut oil to create a rich and satisfying layer. On top of that comes a glossy layer of melted dark chocolate, lightly sweetened with stevia, which keeps the glycemic load low and supports steady energy, which means no blood sugar crashes here.

INGREDIENTS:

Prepare the Base Layer:

  • 100 g cashews
  • 100 g hazelnuts
  • 20 g pitted soft dates
  • 3 tbsp almond butter
  • 2 tbsp coconut oil, melted

Prepare the Top Layer:

  • 70 g 90% cocoa dark chocolate, roughly chopped
  • 1 tsp liquid stevia extract, more to taste

METHOD:

  1. Grease a 15x21 cm glass container with coconut oil.
  2. Place the cashews, hazelnuts, and dates in a food processor and blitz for a bit until they are smoother but not completely ground. Add the almond butter and coconut oil and mix to combine.
  3. Spoon the mixture into the baking tray and smooth it into an even layer.
  4. Meanwhile, melt the chocolate and the stevia in a bain marie until smooth. Pour the melted chocolate over the nut mixture and smooth out in an even layer.
  5. Put the lid on the container and place it in the freezer for at least 40 minutes.
